Green Goddess Egg and Avocado Burger

Ingredients

1 pkg (300 g) Yves Veggie Cuisine® The Good Veggie Burger (4 burgers)
1/2 cup (125 mL) mayonnaise
2 tbsp (30 mL) lemon juice
2 tbsp (30 mL) finely chopped fresh parsley
1 tbsp (15 mL) each finely chopped fresh chives and tarragon
1 clove garlic, minced
1/4 tsp (1 mL) each salt and pepper
4 brioche buns, split and toasted
1 cup (250 mL) shredded lettuce
1 ripe avocado, halved, pitted, peeled and sliced
4 eggs, fried

Directions

  • Cook Yves Veggie Cuisine® The Good Veggie Burgers according to package directions.
  • Meanwhile, whisk tog ether mayonnaise, lemon juice, parsley, chives, tarragon, garlic, salt and pepper.
  • Spread mayonnaise mixture over bottom half of each bun. Top with lettuce, avocado and fried eggs. Cap with top half of each bun.

Tips

  • Substitute English muffins or bagels for brioche buns if desired. Use crisp lettuce, such as romaine or
  • iceberg. Also delicious with baby arugula, watercress or spinach.
