Chipotle Lentil and Quinoa Veggie Burger

Ingredients

4 Yves Veggie Cuisine® Lentil & Quinoa Patties4 hamburger buns, white or whole wheat
1/2 cup (125 ml) Chipotle Sauce (recipe follows)
1-2 tomatoes, sliced
Romaine or Iceberg lettuce
Thinly sliced red onion
1/2 cup (125 ml) Quick Homemade Pickles (recipe follows)

Chipotle Sauce
1/2 cup (125 ml) Spectrum® Eggless Vegan Mayonnaise
1 chipotle in adobo sauce
1 tsp (5 ml) adobo sauce
Pinch of dried oregano, regular or Mexican
1 tsp (5 ml) fresh lemon or lime juice
Salt and fresh ground black pepper

Quick Homemade Pickles
1/2 cup (125 ml) seasoned rice vinegar
1 tbsp (15 ml) sugar
1 garlic clove, peeled and smashed
Good pinch of salt
3 cups (750 ml) regular or seedless cucumbers, thinly sliced on diagonal
1 tbsp (15 ml) chopped cilantro or flat-leaf parsley
1 tbsp (15 ml) chopped mint

Directions

Chipotle Sauce

  1. For Chipotle sauce, combine all the ingredients in food processor and puree. Rectify seasoning to taste. This sauce can be prepared ahead of time and chilled from 3 to 5 days before using.

Quick Homemade Pickles

  1. In a small sauce pan over medium-high heat, combine rice vinegar, sugar, garlic and salt. Bring to a simmer and cook until sugar dissolves.
  2. Meanwhile, in a large bowl, combine cucumber, cilantro and mint. Pour hot vinegar on cucumber, stirring gently to coat evenly. Let cool at room temperature, then serve or chill until ready to use.

Chipotle Lentil & Quinoa Veggie Burger

  1. Oil grill and preheat barbecue to medium. Cook burger patties according to directions.
  2. To assemble burgers, spread bottom of each burger bun with chipotle sauce, then top with a patty. Garnish with tomatoes, lettuce, onion and homemade pickles. Serve immediately, with a side of Terra Chips® Blues and a green salad with sliced avocado, if desired.
